Potato Skins!



Here is a great recipe for potato skins. Not that is hard to come up with a recipe for something like potato skins, but this really is a good one. The picture doesn't do these things justice. It is my new favorite thing to make for parties. I just can't get enough of them!

1. Scrub 8 potatoes and bake for 1 hour @ 400 degrees
2. When cool, cut in quarters and spoon out middle of potato, leaving 1/4 inch remaining in skin.
3. Brush with melted butter inside and outside of skin, sprinkle with salt on both sides, and bake for 10 mins. @ 450 degrees, then turn over and repeat baking time.
4. Sprinkle with pepper, cheese, and bacon and then bake again until cheese is melted and bubbly.
5. Enjoy

I have made these the day before a party and if you just pull them out of the fridge and bake them again they turn out just as good! If anyone has some good "party" food I would love to have a new recipe, please share!

I am so hungry and pulled up your blog and it seriously made my mouth water! I loved when we had those and they really are so good! The best part is putting as much cheese and bacon as you want on them! I love how much you love food and making things.

I have a really yummy dip recipe.

2 8oz. regular cream cheese
1 16oz. sour cream
1 regular or spicy Jimmy Dean sausage
2 cans chili peppers
1 can jalapeno peppers

~depending on how spicy you like it you could use 1 can chili 2 cans jalapeno. If you like it really spicy you could always do 3 cans jalapeno.

fry sausage.
melt cream cheese in a crock pot.
mix in sour cream, cooked sausage, and peppers. turn to and keep on low setting. Enjoy with a bag of corn chips. So good!
